Carrots Halwa with Raisins

Gajar ka halwa, also known as gajorer halua, gajrela, gajar pak, and carrot halwa is a carrot-based sweet dessert pudding made by placing grated carrots in a pot containing a specific amount of, milk and sugar, cardamom and then cooking while stirring regularly.

Cooking instructions
* Step 1
Peel, Wash and grate carrots and transfer it in a heavy bottomed karahi. Cook it on low flame till its water dries up.
* Step 2
Now add 1/2 litre milk and let it simmer on low flame till milk is absorbed by carrots. This process takes 30 minutes
* Step 3
Add green cardamom powder, dry fruits and melon seeds and mix well.
* Step 4
In a separate pan heat ghee. Transfer the halwa in ghee. Mix well.
* Step 5
Now add sugar and stir well and cook till sugar dissolves completely in carrots. Keep on stirring continuously as when sugar is added it may burn if not stirred.
* Step 6
Now mash khoya with hands and mix in it.
* Step 7
Serve hot with milk or as a dessert after meal.
