Aubergine and mozzarella mini pies
I had a left aubergine so I thought to make these delicious mini pies. Serve with a crispy salad for a light, vegetarian meal #dinner #pie #mainmeal #vegetarian

Cooking instructions
* Step 1
Heat oil in a pan or wok. Chop aubergine into small cubes. Deep fry for 3-4 mins until golden brown. Drain on kitchen paper. Preheat oven to 180.
* Step 2
Put aubergine, mozzarella, passata and oregano in a bowl and mix. Season with salt
* Step 3
Cut pastry into rounds. Prick with a fork and glaze with egg. Use the excess bits to create a border. Spoon mixture inside. Bake for about 15-18 mins.
