Spaghetti Cacio e Pepe

The famous Cacio e Pepe. It's made with Pecorino Romano cheese not with Parmesan. This is how the Italians eat pasta with a cheese sauce! It's probably the second most famous dish from Rome after Carbonara. The idea is for it to be creamy but not swimming in sauce. It's delicious! spaghetti

Cooking instructions

* Step 1

Bring a pot of salted water to the boil and cook pasta according to instructions.

* Step 2

Towards the end of cooking time, remove some cooking water and keep a side in a glass or cup. Drain pasta al dente and put back in the pot. Add the water and cheese

Mix it all up well for 1 min. Add a good amount of black pepper. Serve 😁
