Spaghetti Cacio e Pepe
The famous Cacio e Pepe. It's made with Pecorino Romano cheese not with Parmesan. This is how the Italians eat pasta with a cheese sauce! It's probably the second most famous dish from Rome after Carbonara. The idea is for it to be creamy but not swimming in sauce. It's delicious! Cooking instructions
* Step 1
Bring a pot of salted water to the boil and cook pasta according to instructions.
* Step 2
Towards the end of cooking time, remove some cooking water and keep a side in a glass or cup. Drain pasta al dente and put back in the pot. Add the water and cheese
* Step 3
Mix it all up well for 1 min. Add a good amount of black pepper. Serve 😁
