Pan fried swordfish with peppers and potatoes
Swordfish has a lovely meaty texture and goes well with potatoes. I added peppers for a bit of sweetness. It was lovely 😀 #newyearnewyou #fish #dinner #mainmeal
Cooking instructions
* Step 1
Peel, chop and boil potatoes in salted water until just cooked. Leave to cool for about 30 minutes while you prepare the rest. Chop the onion and peppers. Heat oil in a pan and add all veg together. Sauté on medium heat for about 10 minutes stirring frequently
* Step 2
While veg is cooking, heat a little oil in another pan and cook the fish for about 2-3 minutes each side
* Step 3
Sprinkle a little salt all over and serve with freshly chopped parsley 😀
