Vellutata di Asparagi e Parmigiano
In Italian, 'smooth' soup is called vellutata. This is one of my favourites. Earthy, creamy asparagus with Parmesan goes perfectly together #soupcontest #Italian #soup #asparagus #vegetarian
Cooking instructions
* Step 1
Fry onion gently in a little oil. When softened, add asparagus and cook a few minutes. Add hot stock and simmer for 8-10 minutes. Add salt and pepper
* Step 2
Using a hand blender, whizz it up then bring back to the boil. Turn turn down the heat and gently add cream, stirring slowly. Serve with more black pepper and Parmesan 😊
