Cooking instructions
* Step 1
Beat eggs and Parmesan in a bowl. Set a side
* Step 2
Fry pancetta without oil until brown. Drain fat and set a side
* Step 3
Roll out pastry, prick with a fork. Add pancetta
* Step 4
Add eggs, more Parmesan and black pepper
* Step 5
Fold edges down slightly to form a border. Using a pastry brush, glaze edges with a bit of the egg mixture inside. Bake at 180 for about 25-30 mins. Turn once or twice during cooking so it browns evenly.
