Kushari is a famous national dish of Egypt. It’s a delicious mix of lentils, rice, macaroni, chickpeas in a tangy tomato paste. Popular amongst working class Egyptians. Legend says it could have originated in India. But it’s a simple recipe with minimalistic ingredients

Cooking instructions
* Step 1
For Tomato Sauce - blend together the onions, tomatoes, garlic, green chilies, coriander powder, roasted cumin powder, tomato purée, malt vinegar and brown sugar to a purée.
* Step 2
Heat the olive oil in a pan and add the tomato sauce purée. On low flame cook until it has a Salsa consistency.
* Step 3
Add the coriander leaves, salt and pepper. Set aside 1 Tbsp for garnish and set aside the rest
* Step 4
Add the cooked rice to the pan, boiled macaroni, boiled whole black Masoor Dal, boiled chickpeas with a dash of olive oil. Mix well
* Step 5
Garnish with rest of the reserved sauce, fried onions and mint leaves
