Chattai Karanji or Holi Gujiya

Gujiya is so synonymous with Holi and there are so many variations to make. Of course fusion too. One such variation I chose to make is a multi coloured one where the food colours have been added to the dough, strips made and interwoven. Dipped with filling, deep fried and enjoyed with a choice of your beverage

Cooking instructions
* Step 1
For the Dough - take Maida in a bowl and add melted ghee slowly to rub the flour with ghee. Once done divide the dough into 4 parts. Major part is white, the rest are small parts of three.
* Step 2
Mix 2 drops of red, pink, yellow colours to the three portions. With little water make tight dough and keep it covered individually with a clean cloth for 10 mins
* Step 3
Prepare the filling - coarsely chop the dry fruits, coconut.
* Step 4
In a pan heat 2 Tbsp ghee and add chopped almonds, fry for 2-3 seconds, add chopped cashew nuts, stir for 2 seconds, add chopped raisins, stir for 2-3 seconds, add chopped coconut, stir for 3-4 seconds, add khoya, dd chopped pistachios and set aside. Add powdered sugar and stir. Add cardamom powder. Mix and set aside to cool
* Step 5
Take the White dough and knead to soften a bit. Make lemon size balls and roll out one small in size like Poori and thin too.
* Step 6
Roll out a red coloured one and a pink one which should be bigger in size from the white and a little thick on sides
* Step 7
Cut strips of both red and pink. Now on the white one very carefully place the red strips and cover the white one. Take the pink strips one by one and place by lifting the red ones alternatively every row. Do this carefully
* Step 8
Put a bowl on the total one and cut out a small Gujiya. Flip the side and now on the white part add 2 Tbsp filling. Fold half and take water and close the seams. Set aside to complete with a red and yellow one
* Step 9
In a pan heat oil and on low to medium flame fry the Gujiyas until golden in colour. Set aside
* Step 10
Plate and enjoy! Subho Dol / Happy Holi !
