A classic fusion food to Momo. Quite commonly found in Delhi, this is a twist from Tibetian style. The Momo is fried, given a smoky effect with coconut husk being burnt and fried again followed by putting in skewers and fried

Cooking instructions
* Step 1
For Momo Filling - grated cauliflower and add little salt. Set aside for 15 mins. Drain the water and add to a bowl. Add grated paneer to it. Add Tandoori Masala and chopped green chilies, chopped spring onion greens and salt. Mix and set aside
* Step 2
For Momo Dough - in a bowl add Maida, add oil, vinegar, and with water make a dough not too tight and not too soft. Smear with 1/2 tsp oil and set aside for 5 mins
* Step 3
Roll out the dough and make peda shaped balls, flatten and with a rolling pin, roll out but keep the edges little thick. Complete the batch and keep it aside
* Step 4
Smear the edges with little water and add the filling in the centre. Pinch one half, pinch on left side and right sides and taper the corners and make a diya shape
* Step 5

Momo Marination - In a bowl add yogurt, fresh cream, mustard oil, Besan, red chilli powder, salt, Tandoori Masala, ginger-garlic paste and whisk well.
* Step 7
In a wok heat oil and fry the Momo’s 70% and set aside
* Step 8
Smear the Momos into the marination and set aside
* Step 9
Take a coconut husk and put on the gas to give a smoky effect. In a bowl add the fried Momo’s, tomato cubes, capsicum and in the centre put a bowl and add the burnt coconut husk. Add ghee and close the bowl.
* Step 10
Take the Momo’s and to give a charred look put on the gas for few minutes and set aside
* Step 11
In the same wok heat oil and butter and add the charred Momo’s, capsicum, tomatoes and lime juice. Toss for 2-3 mins. Set aside
* Step 12
Put the Momo’s into the skewers with capsicum and tomato. Heat oil in the wok and fry the Momo’s with a cover on for 1 min. The top would be juicy and the bottom fried.
