Pumpkin Cup cakes

#pumpkin #fallrecipes #autumnrecipes #soulwarming Autumn calls for soul warming foods and one of them is Pumpkin Muffins. These muffins can be relished as it is or made into cup cakes with some delicious and soft and creamy mascarpone cheese frosting

Ingredient

1/2 cup

oil

1 teaspoon

Baking powder

1/2 teaspoon

Baking Soda

1 teaspoon

cinnamon powder

1/2 teaspoon

Vanilla essence

Cooking instructions

* Step 1

Whisk together eggs, pumpkin puree and oil.

Add flour, sugar, Poppy seeds, baking powder and baking soda

Fill 3/4 th or 2 tablespoon full in to the cupcake liners and bake in a preheated oven @ 180 degrees Celsius for 20 minutes.

For the frosting, beat together butter, sugar till light and fluffy. Add mascarpone Cheese and beat again. Lastly add the vanilla essence and mix with a spatula.

For the orange Frosting, divide the frosting into 2 parts. Add 1/4 teaspoon of food color in one part and mix with a spatula. I used a ziplock bag and a start nozzle. Filled the bag with both the frostings and decorated the cupcakes.

Decorate the cupcakes in swirls or roses. Add some sprinklers of you like.
