Fried rice with wok hey
Simple step by step instructions to make your own home cooked fried rice infused with "wok hey" which is the soul of this dish. It's difficult to replicate "wok hey" at home because home stove is not design to output super high heat. Furthermore many are using induction stove which is not design to work with wok! Fear not, below method will get you close to that "wok hey" realm. May the wok hey be with you.

Cooking instructions
* Step 1
Prepare a bowl of cooked rice for one person. If you using electric rice cooker, use its cup, one cup will do. The cooked rice must be loosened with chopsticks and left aside to cool. This allow moisture to escape. Note: Some people recommend cooling overnight in fridge inside a ziplock bag to reduce its stickiness to make so called "Ge Ye Fan" aka "overnight cooked rice".
* Step 2
For one person portion, use 100g is sufficient. Chop the long bean into tiny bits.
* Step 3
For one person portion, use one red onion is sufficient. Slice the onion as shown in my picture below. Note: Recommend to use red onion for better aroma.
* Step 4
For one person portion, use 3 small eggs or 2 large eggs.
* Step 5
Add white pepper powder and MSG. Stir the eggs.
* Step 6
Heat up cooking oil in frying pan with high heat. Stir fry chopped onion for 10 seconds. Note: Do NOT use olive oil for dish that needs wok hey.
* Step 7
Add the chopped long bean. Stir fry until the bean looks thoroughly cooked.
* Step 8
Leave some space on the frying pan, pour the egg mixture in. Quickly stir fry everything for 10 seconds, making sure the egg scrambled.
* Step 9
Add the cooked rice. Scramble the rice evenly.
* Step 10
Add one tablespoon light soya sauce. Mix it evenly.
* Step 11
Add one teaspoon red chili powder. Continue to mix it evenly under high heat. You should feel the "wok hey" coming. Add one teaspoon sesame oil for extra aromatic right before serving.
* Step 12
From the time you add the cooked rice until the wok hey appears, the time spent should be controlled within two minutes. High heat is used all the way. Cooking too long will make the egg lose its moisture.
