Summer Fruit Cobbler

This is a great time of year for several types of fruit, including stone fruit and berries. When you’re blessed with an abundance of perishable fruits, a cobbler is one way to enjoy them. This recipe makes use of readily available ingredients and comes together quickly. Don’t feel constrained by the recipe. You can use any combination of fruit that you like, as long as you have enough to fill the cooking pan about 2/3 full.

Cooking instructions

Gather the ingredients.

Melt the butter and set it aside to cool.

Lightly grease an 8x8” pan with cooking spray (or melted butter). A 2 quart baking dish would also work. Set aside.

In a large bowl, combine the fruit, tapioca, lemon juice, 1 teaspoon sugar, and spices.

Transfer the fruit to the prepared 8x8” pan.

In a separate bowl, whisk together the egg, sugar, milk, and vanilla. Add the melted butter and whisk again.

In a third bowl, sift the flour, baking soda, and salt.

Pour the wet ingredients into the dry ingredients and mix gently. Do not overmix.

Pour the batter over the fruit and spread it gently and evenly to the corners and sides of the pan.

Place the pan on an aluminum foil lined cookie sheet. This will catch any spillovers. Transfer to the preheated oven and bake for 30 minutes.

After 30 minutes, cover the pan with foil to prevent overbrowning, and bake for an additional 20 to 25 minutes.

Serve a scoop as is, or with whipped cream or a scoop of ice cream.
