Green onion & Schezwan pepper Chicken (Healthy Chicken option)

Cooking instructions

* Step 1

In about 3 litres water boil and cook the chicken with ginger and spring onion. If you want to have the broth like light clear soup add carrot and beans too. Boil it for about 35-40 minutes till whole chicken is well cooked. Poke with a chopstick on the chicken thigh and if no blood ozzes out that means your Chicken is cooked. Take it out on a plate and let it cool to room temperature. Don't throw away the chicken boiled water use it as broth or stock.

While the chicken is getting cooled, prepare the seasoning. Chop the green onion, add Schezwan peppercorns and oil and mince with a broad knife, crushing the peppercorns as far as possible. Once done put it in a bowl and add chicken broth (use the broth in which the chicken was boiled) and all other ingredients in it, give a good mix.

Once chicken is cooked, debone it. Slice it and arrange it in a bowl and put the bowl upside down on the plate to give a round shape.
