Healthy Fondant Potatoes
I love fondant potatoes, golden fluffy, melty in the middle delicious potatoes! I’m trying to be healthier at the mo! So normal fondant potatoes are fried and basted in lots of butter! If you want to use butter it’s the same principle!

Cooking instructions
* Step 1
Peel the potatoes, then trim them to make rectangular shapes, ideally they need to be about the same size, so they cook at the same time!
* Step 2
This is optional and only for decoration purposes, I finely slice little lines into them.
* Step 3
In a pan I spray the oil or put in the butter and heat on a high heat, then add the potatoes. Now boil a kettle!
* Step 4
Now let the potatoes sizzle so that they get a golden crust.
* Step 6
Let the other side sizzle until brown. If you use butter it will be foaming now around the potatoes.
* Step 7
Throw in the herbs and garlic! Make the stock in a jug. Pour in; BE CAREFUL it can really bubble and spit! Pour it in so its half way up the potatoes. Add seasoning too!
* Step 8
Place on a lid, it helps if it’s a glass one so you keep and eye on it! Turn down the heat to a very gentle simmer. If it’s to bubbling too much it makes the potatoes break up and fall apart.
* Step 9
If need be top up with stock if it simmers down! My potatoes took about 25 mins! To know they are ready I pierced mine with a metal skewer, they are ready when lovely and soft inside!
* Step 10
Serve with whatever your choice! You can save the stock mixture for use in other dishes simply refrigerate!
