Dry Bhindi Sabzi

#cookeverypart Bhindi also known as Okra or Ladies Finger is a nutritious green vegetable with many health benefits.In this recipe bhindi is shallow fried and has a dry texture by mixing dry spices, onion and garlic. Sautéing the onions and garlic with common Indian spices makes this dish flavourful. Further its tangy taste is accentuated by the tinge of chaat masala and pureed tomato.Serve this Indian style Dry Bhindi Sabzi or Sukhi Bhindi hot with roti ,paratha or dal and rice to make a complete and hearty Indian meal.

Cooking instructions

* Step 1

Wash bhindi and pat dry completely in a kitchen towel. Remove head and tail of bhindi and chop each diagonally. Heat 1.5 tablespoon oil in a frying pan.Smear 1/4 th tsp salt and shallow fry bhindi over medium flame until it changes to dark green and shrinks.Remove from flame with a slotted spoon and set aside.Heat remaining 1.5 tbsp more oil in the pan.Saute cumin seeds and ajwain.When they splutter,add hing and saute.

* Step 2

Next add minced garlic and saute till it changes colour and becomes aromatic.Add half of finely chopped onion.Sprinkle salt and fry till light brown. Add shallow fried bhindi and deseeded chopped green chilli.Add turmeric powder,red chilli powder,sabzi masala,garam masala,chaat masala, tomato puree, salt and 1/4 th tsp sugar or to taste.Mix well and saute in low flame till masala coats bhindi.

* Step 3

Sprinkle rest of finely chopped onion and coriander leaves.Saute till dry.Garnish with slit green and red chillies and coriander leaves.

Serve hot with roti, paratha or any Indian flatbread or as a side with rice and dal for a complete and hearty Indian meal.
