Maharashtrian Masale Bhaat

Cooking instructions
* Step 1
Wash & soak the rice in water for half an hour.
* Step 2
Dry roast the ingredients for the masala till they turn aromatic and brown. Allow the roasted spices to cool.
* Step 3
Coarsely powder the roasted masala, you can dry grind in a blender too. Set aside the ready masala powder.
* Step 4
Heat ghee in a deep cooking pan. Add the bay leaves, cumin, mustard, asafoetida, slit green chillies & curry leaves. Allow it to crackle for a few seconds.
* Step 5
Add the chopped ginger garlic and saute for 30 seconds. Add the sliced onions, saute until pink.
* Step 6
Add the tomatoes, saute & cook for 2-3 mins until soft.
* Step 7
Add the carrots, beans & peas, mix well & cook. You can add potatoes and any other veggies of choice like tendli or eggplants.
* Step 8
Add the turmeric, coriander, red chilli & goda masala powders, add salt & sugar. Mix well.
* Step 9
Add the ready masala powder, mix well.
* Step 10
Now add the rice, reserving the water used to soak it. Stir briskly.
* Step 11
Add 1/4 cup grated coconut, the reserved water and some more water as required, mix. Also stir in the peanut powder & some of the chopped fresh coriander.
* Step 12
Cover & cook on sim for 10-12 mins or until done.
* Step 13
Garnish with the remaining chopped coriander and coconut, sprinkling some fried Kaju.
Serve with light Maharashtrian Kadhi or plain curd.

You can also serve it as part of a traditional Maharashtrian Menu, as it is a must have dish for any festive meal.
