Aloo Masala Sandwich
This is a family favourite sandwich, my mother in law's original recipe which I have improvised over the years with a few additions. My husband and daughter are very fond of it and love to have it for breakfast or even as a snack. It can be made in a sandwich grill or even on a nonstick tava.

Cooking instructions
* Step 1
Wash, peel and pressure cook the potatoes with some water upto 7-8 whistles or until soft.
* Step 2
When the pressure releases, drain and cool the potatoes.
* Step 3
Peel off the potato skin.
* Step 4
Mash the potatoes with a masher.
* Step 5
Add the cumin seeds, garam masala, amchoor powder, green chillies and salt, mix well.
* Step 6
Heat the ghee in a nonstick pan, add the mashed and seasoned potatoes, saute for 2 minutes until golden brown.
* Step 7
Add the fresh coriander, mix well and take off heat.
* Step 8
Allow the mixture to cool for 2-3 minutes.
* Step 9
Take 2 bread slices, add 2 heaped tbsp ready potato mix on one slice, cover with the other slice to make a sandwich.
* Step 10
Apply butter on both sides and grill on a hot nonstick tava on low-medium heat, until golden brown. Alternatively, grill in a sandwich toaster.
* Step 11
Flip and cook from both sides until golden brown and crisp. Press down on the tava lightly with a spatula as you grill them.
* Step 12
Once done, cut into rectangles or triangles, serve hot with ketchup, tea / a glass of milk or juice on the side
