* Step 1

To make Ghugni - Aloo Chop, first pressure cook potatoes (chopped) and soaked white peas by adding turmeric powder.

Heat oil in a heavy pan. Add ponch phutan and splutter them. Then add chopped onion and fry till golden brown. Add ginger-garlic -red chilli paste.

Cook the masala on low heat and wait till the oil separates from the masala. Add tomatoes, salt and cook till soft and mushy

Then add all the dry ingredients of Ghugni preparation. Cook on low heat for 3-4 minutes.

Now, add the boiled white peas, adjust water and boil for 2 minutes. The Ghugni is ready.

Take the ingredients of besan batter and make a medium consistency batter.

* Step 1

Firstly take a mixing bowl, add all the ingredients of besan batter except oil, mix well. Add water slowly slowly, whisk it, make a lil thick batter.

In goes oil, whisk it again, keep aside.

Take another bowl, add mashed aloo, salt, red chilli powder, garam masala powder, green chilli, onion & dhania patta. Mix well. Keep aside. You can saute it if you want.

Now take a clean dry dish, arrange the slices.

Fill 2 slices with aloo mash & spread chutney onto the other 2 slices.
