Heat oil in a pan & add the onions, ginger, garlic paste and cook till gets transparent, on high flame.

When the water dried add the fresh coriander, green chillies and mix it (the filling should have no oil, or thr patties will get soggy) drain any extra oil & leave it to cool down.

* Step 1

Marinate fish with salt 🧂 and 1/2 tsp black pepper powder and keep aside for 10 mins, heat oil 🌻 in a flat skillet, place the 🐟 fish and cook on either side for 10 min or golden brown

* Step 2

Remove the fish 🐟from oil and transfer fish pieces 🐟 to kitchen napkin, let it cool down completely, start removing flesh from the bone, place it in a bowl separately

* Step 3

Chop onion 🧅, tomato 🍅, green chillies, coriander leaves 🌿/ parsley, lettuce leaves 🌱 and grated carrot 🥕in a bowl 🥣 mix gently, add fried shredded fish 🐟and mix well, add chilli vinegar, lemon juice 🍋, salt 🧂 and mix well

Serve with goan prawns curry🦐, steamed rice 🍚

* Step 1

In a bowl 🥣, add boiled potatoes 🥔, grated zucchini, red chillies flakes 🌶️, salt 🧂, finely chopped green chillies, dry fenugreek leaves 🌱, cumin seeds, coriander cumin powder, paprika powder 🌶️, gram flour, black pepper powder and mix well, make round patties and keep aside.

* Step 2

Heat oil in a frying pan, add patties and cook them till golden brown. Serve with tomato sauce/ ketchup 🍅

Cooking instructions

* Step 1

In a bowl 🥣, add plain flour, carom seeds, salt 🧂, ghee and rub the flour well for 3 mins with your palms, add water 💦 little by little and mix the flour to form a stiff dough, note: it should be a stiff and not soft dough, cover and rest for 30 mins, keep aside or use samosa sheets.

* Step 2

Heat ghee, add cumin seeds, when start to crackle, add a pinch of asafetida, chopped carrots 🥕 saute for 1 min, add salt 🧂, 1 tsp paprika powder 🌶️, coriander cumin powder, garam masala powder, black pepper powder and mix well. When carrots are tender remove from heat.

* Step 3

In a bowl 🥣, add crumble them do not mash them up, add finely chopped green chillies, finely chopped dill/ coriander leaves 🌿, dry mango powder 🥭, Chaat masala, red chilli flakes, fennel powder and sauted carrots 🥕 and mix well with potato mixture 🥔, check salt 🧂. Filling is ready

* Step 4

Make a cone with samosa sheets or with home 🏡 made dough and fill in the masala, seal the edges well and keep aside, complete all the sheets or dough with the masala, heat oil in a wok, fry the samosas till golden brown and serve hot, garnish with tomato chutney.
