Ingredient

1 tbsp

coconut oil

75-100 g

soba noodles

Cooking instructions

* Step 1

Preheat the oil in a pan on a medium heat. (The pan needs a lid for later.)

* Step 2

Add the garlic, ginger, spring onions, and lemongrass. Sauté for 5 mins.

Add the stock. Bring to a boil. Then add the noodles and cover the pan. Cook the noodles according to the directions on the packet.

About 3 mins before the noodles are ready, add the greens and chilli. Cover the pan.

Stir in the lime. Take out the lemongrass. Ladle into bowls and then sprinkle the chilli/ spring onion garnish on top. Enjoy 😋

This tangy and spicy soup is a nutritious combination of pak choi, carrots and cabbage. It is a good source of carbohydrates, dietary fiber, vitamin A, C and K. It can be enjoyed as an evening snack especially during winters.

Ingredient

2 tbsp

Soy sauce

4 tsp

Vinegar

2 tbsp

Corn starch

1/2 tsp

Salt

1/2 tsp

Sugar

Water

Cooking instructions

* Step 1

Take some oil in a deep fry pan, then add ginger paste to it and cook it for some time till raw smell goes away.

* Step 2

Add pak choi, carrots and cabbage to the paste and cook for 2-3 minutes.

* Step 3

Add water to the vegetables and let it cook for few more minutes, then add vinegar, soy sauce, sugar, salt and boil for some more time.

* Step 4

Mix the corn starch powder in water and slowly add little by little to the soup while stirring the soup.

* Step 5

Cook the soup till it becomes thick, and then serve it hot.

Pak choi with black gram is a simple and easy dish providing protein, dietary fiber, vitamin A, C, folate, iron and phosphorus. It can be enjoyed with rice or chappati as a part of main course.

Ingredient

* Step 1

Heat oil in a cooker, add the cumin seeds with ginger garlic paste and sauté till the rawness disappear.

* Step 2

Then add the onions, ginger garlic paste, green chillies, turmeric and salt to it. Cook until golden brown.

* Step 3

Add the chopped tomatoes to it. Cook until oil lightly separates from the edges.

* Step 4

Add black gram dhal and pak choi to it and cook for 1-2 minutes.

* Step 5

Now, add 3 cups of water and pressure cook it for 1-3 whistles.

* Step 6

Add lemon juice to it and serve.

* Step 1

Mix the pak choi, cabbage, onion, green chilies, ginger and salt with the gram flour, then add water till the desired semi-liquid consistency of the paste is acquired.

* Step 2

Mix the paste thoroughly so that no gram flour clots remain in the paste.

* Step 3

On a griddle greased with oil, add the paste with the help of the ladle like small pancakes and shallow fry from both the sides till light brown colour.

* Step 4

Serve warm with sauce or chutney.

* Step 1

Firstly make the meatballs by mixing everything in a bowl then fry them gently in a pan.

* Step 2

Next add the garlic, coriander and onion to the pan and cook off for about 5 mins.

* Step 3

Add the coconut cream to the pan and reduce right down for a further 5 mins.

* Step 4

Add the frozen peas and the pak choi to the meatballs and cook for a few mins keeping a bit of bite to the pak choi.

* Step 5

Serve with fluffy white rice.
