Meatless but loaded with protein and you'll love every bite into this yummy fried rice.

Ingredient

1 cup

quinoa

2 tsps

salt

2 cups

water

1/2

lemon

2 tbsps

olive oil

Cooking instructions

* Step 1

Add 1 cup quinoa to 2 cups water with a drop of oil in a medium saucepan. Bring to a boil.

* Step 2

Cover, reduce heat to low, and simmer until quinoa is tender, about 15 minutes.

* Step 3

Drain the excess water.

* Step 4

In a pan heat some olive oil.

* Step 5

Saute garlic,onions and ginger with a tsp of salt.

* Step 6

Add some turmeric powder and shredded carrots and saute well till they are almost cooked and onions turn light brown.

* Step 7

Now add the black beans and green peas into this with some pepper.

* Step 8

You can add some mixed spices according to your taste.

* Step 9

Check salt in between.

* Step 10

Once the veg mixture is cooked add the quinoa into this with a squeeze of half lemon and mix well.

Serve hot !!

Classic punjabi dish.Deep fried paneer balls in spicy creamy onion tomato gravy......Best served with Naan, Paratha.

Ingredient

1 1/2 cups

paneer Shredded

1 tsp

Pepper

1 tbsp

Heavy cream

1 tsp

Salt

1/2 tsp

Turmeric

Cooking instructions

* Step 1

For making the kofta balls...mix all the ingredients given to make a soft dough including bread crumbs. Make small balls out of the dough.

* Step 2

You can either skip bread crumbs in the dough and coat the kofta balls with beaten egg whites and roll over bread crumbs and deep fry them.

Now for the gravy, in a pan heat some oil and pop some cumin,cardamom,cinnamon stick and clove.

* Step 4

Saute the onion with ginger garlic paste,salt and turmeric.

* Step 5

Once its done, add the puree of crushed tomato and mix well till oil separates.

* Step 6

When the onion and tomato is cooked,add the spice powders and cilantro and stir.

* Step 7

Now cool this mixture for few minutes and along with cashew almond powder grind this mixture to fine paste.

Pour the masala paste into the pan with some heated oil and stir well till the gravy is cooked.

Add heavy cream to this gravy and let is simmer for about 2 minutes and your done!

Place the kofta balls in the gravy and serve hot with Naan, Paratha and even rice.

Indian curry-Cottage cheese cubes and green peas cooked in thick spicy gravy..it has got a wonderful aroma of blended spices and cream. Goes as a side dish with rotis, naan and rice.

Ingredient

2 tbsps

olive oil

1/2 cup

heavy cream

1 tsp

pepper

1 tsp

salt

Cooking instructions

* Step 1

Take 1 hand full of cashew,almonds along with 2 tbsp shredded coconut.Skin the almonds.

* Step 2

Grind them well with little water to form a thick paste.Keep it aside.

* Step 3

Marinate the paneer cubes with some salt,pepper and chilli powder for about 30 mins.

* Step 4

In a large pan,heat some oil and add cumin seeds,cardamom, bay leaf,cinnamon sticks and stir.

* Step 5

Now add the ginger garlic, chopped onion, green chilly and saute well with a pinch of salt and turmeric.

* Step 6

Once that is done,add the tomatoes and cook for 5 mins,

* Step 7

Same time in another small pan,shallow fry the paneer cubes and remove excess oil and keep.

* Step 8

Make a paste of this masala and pour it back to the pan with little heated oil.

* Step 9

Combine the cashew coconut paste with this masala puree and mix well.

* Step 10

Now add the fried paneer cubes,  green peas and mix well.

* Step 11

Mix in little heavy cream for that richness of the gravy.

* Step 12

Serve hot garnished with some cilantro and heavy cream.

4 . Egg and green peas masala

Make sure the gravy is not too thin. Add salt as per taste to the recipe above.

Cooking instructions

* Step 1

In a large saucepan,heat some oil and add cumin seeds,cinnamon sticks and bay leaf.

* Step 2

Add onions with ginger garlic paste,turmeric and salt and saute well.

* Step 3

Add green chilies,green peas and mix well.

* Step 4

Make a paste of coriander powder,pepper,garam masala and cumin powder and water.

* Step 5

When the onions turn golden brown and oil separates,add the masala paste and saute continuously.

* Step 6

When the onion and masala is cooked,add the halved boiled eggs.

* Step 7

Sprinkle some cilantro and serve hot.

5 . Instant Pot Lemon Rice

South Indian main course. Quick and easy recipe for tangy rice and green peas with a burst of lemon flavor.

Ingredient

2 cups

water

1 tsp

turmeric

Cooking instructions

* Step 1

Keep the Instant Pot on saute mode and once hot,add some ghee or oil.

* Step 2

Pop the mustard seeds and add bay leaf, curry leaves,green chilies and shallots.

* Step 3

Add salt,turmeric powder,peanuts and saute well until shallots turn golden.

* Step 4

Pour the lemon juice into this and saute well.

* Step 5

Now add the washed and drained rice into the inner pot.

* Step 6

Mix well all the ingredients until well combined.

* Step 7

Add 2 cups water and check the salt. Now set the 'pressure cook' mode to 4 mins.

* Step 8

Once done,open the lid using Quick Release and transfer the rice to a colander to cool.(to prevent sticking of rice)

* Step 9

Serve hot  with pickle and salad of your choice.
