Ingredient

2 tablespoons

Pure cow ghee

1 cup

Sugar

1/2 cup

Milk powder

1 cup

Water

Cooking instructions

* Step 1

First, take a thick based pan. Heat ghee. Add cloves and cardamom and saute well.

* Step 2

Drain the soaked rice and add to the ghee. Saute well for 2 minutes.

* Step 3

Then add warm water and cook till just done. Then add milk mixed with saffron food colour and cook till absorbed and rice is cooked, press between 2 fingers. If it gets mashed, it is cooked.

Now add milk powder, sugar, turn well, cover and cook till sugar is dist and coates the rice.

* Step 5

Now gently mix cardamom powder and saffron water. Serve in decorative bowls or plates, garnish with nuts and serve warm! Enjoy!

It lends aroma, flavour, taste to any dish and takes it to another level. Be it a sweet or Spicy dish, Cardamom makes it special. It is also a digestive spice, mouth freshener, immunity enhancer and has many micro nutrients in its tiny shape. Found in southern India, it travels all over the world for its culinary benefits.

Ingredient

1/4 cup

Fine sooji

3/4 cup

Sugar

10-12

Cashews

10-12

Raisins

1/2- 3/4 cup

Milk (Hot)

Cooking instructions

* Step 1

First, wash the moong Daal properly in water 3 to 4 times. Soak it for 2 hours. Then drain and grind to a coarse paste using very little water.

* Step 2

Then heat a non-stick pan. Add ghee. Then lightly fry cashews and raisins in it and remove. Then add sooji and lightly roast it till aromatic.

* Step 3

Then add the moong daal coarsely ground in the sooji and roast it on low flame while stirring till it is aromatic.

* Step 4

It may take 10 to 15 minutes. Then add 2 tablespoons more ghee and further roast for 5 minutes. Now add the hot milk slowly.

* Step 5

Keep stirring till you get a thick paste. Cook for 5 minutes. Now add sugar and cook till it dissolves.

* Step 6

When the sugar melts, add 2 tablespoons ghee and let it cook while stirring to ensure even browning.

* Step 7

Lastly add the cardamom powder and saffron mixed in warm milk. Add yellow food colour if liked. Mix well.

* Step 8

After 5 minutes of mixing and cooking, add half of dry fruits, combine and pour in greased tray. Garnish with chopped cashews. Let it set and then cut in squares or set the Halwa in silicon molds in different shapes. Or serve as it is as a royal dessert.

#boxweek12 #butterscotchcake #cookpadindia I have given a new twist to halwa by making a chocolate and butterscotch Halwa Cake. It is healthy too as there is no maida, whipped cream or oil used. Try out and your family will be drooling to eat it!

Ingredient

2 cups

Fine sooji

1 cup+ 1/4 cup

Milk

2 cups

Water

Cooking instructions

* Step 1

First, heat ghee in a kadhai. Add cardamom powder and sooji. Roast till aromatic and light golden on low flame.

* Step 2

Side by side, heat the milk and water. Add sugar or jaggery and stir well. When it boils, switch off flame and strain it. Keep covered.

* Step 3

When Sooji is roasted well, add the sweet water, 1 tsp crushed chikki and stir well. Cover and cook for 2 minutes.

* Step 4

Then remove from flame and cool to room temperature. Then take a cake or pie mold and grease well with ghee.

Then line with cling wrap. Pour the halwa and press well all over till it gets the shape of the mold. Refrigerate for 1 hour.

Then remove and unmold on a serving plate. Heat the dark chocolate by adding 1 tablespoon milks and mix well. Decorate the halwa with melted dark chocolate by pouring in top and sides.

Sprinkle the remaining Chikki crush and place mango slices on top. Serve chilled and enjoy!

* Step 1

First, heat a deep based kadhai or pan and add 1 tablespoon ghee to it. Add the dates and stir fry well for a minute. Remove from flame, cool and grind in mixer along with roasted peanuts and jaggery to make a fine sticky mixture.

* Step 2

Then heat remaining ghee and roast the kuttu flour to it. Slow roast it till it gives a nutty aroma and changes to light brown. Then remove from flame and add peanut powder while it's still hot.

* Step 3

Add peanut and date mixture, cardamom powder and mix well with a rubber spatula or hand till it is completely combined.

* Step 4

Then take a small portion and roll into small ball sized laddus. If mixture looks dry, then add 2 tablespoons hot ghee and combine well. Then roll the balls. Garnish on top with a piece of cashew.

* Step 5

Arrange them in a plate and serve as a healthy fasting dessert. Or store in airtight box in fridge for 1 week. Happy Navratri to all!
