panchphoren

1/2 tsp

haldi powder

1 tsp

salt

Cooking instructions

* Step 1

Wash all the veggies separately, keep aside.

* Step 2

Take a wok, add oil, heat it. Add panchphoren, let it splutter.

Add in ginger garlic, saute it until light brown. Add in aloo pcs, stir fry it for 2 minutes.

Now add haldi powder & green chilli, mix it well. In goes saag & cabbage, stir fry it for a minute.

Cook it covered on low flame, until aloo is almost cooked. Open the lid.

Add tomato, increase the flame, mix it well.

Lower the flame, cover it with the lid, cook it for 3 minutes. Open the lid, increase the flame, stir fry it until a lil dry. Do not overcook it.

Turn off the flame, cover it for a minute. Take out in a serving bowl, garnish it with a dhania sprig.

Cooking instructions

* Step 1

Firstly break aloo in small pcs, soak in 1 cup warm salty water, keep aside.

Take a wok, add oil, heat it. Add Panchphoren, let it splutter. In goes green chilli, saute it for a sec.

* Step 3

Now add tomato puree & salt, mix it well. Lower the flame, cover it with the lid, cook it until oil has oozed out.

* Step 4

Open the lid, increase the flame, add haldi, dhania & red chilli powder, mix it well. Add lil water, cook it until oil has surfaced. Now add saunf, amchur & garam masala powder, stir it nicely.

Now add 1 cup boiled water, mix it well.let it boil, keep boiling for 2 minutes.

Add in soaked aloo along with water, mix it well. Cook it for 3 minutes.

Lower the flame, cover it again, cook it for 3 minutes. Gravy should be a lil runny.

* Step 8

Turn off the flame, open the lid after 5 minutes.

* Step 9

Add chopped dhania patta, mix it well.

* Step 10

Take out in a serving bowl, have it with Poori or Paratha..

Ingredient

Cooking instructions

* Step 1

Take a pressure cooker,add oil, heat it.

Turn off the flame,(to avoid burning) add Panchphoren, let it splutter.

Add haldi powder, now add aloo immediately, turn on the flame, stir fry it for a minute.

Add ginger garlic, stir fry it until rawness is released.

In goes tomato 🍅, also add salt, stir fry it for a minute.

Now add red chilli powder & dhania powder, stir fry it for 2 minutes.

Add in garam masala powder, stir fry it until oil has oozed out.

Add 1 cup water now, give a stir. Place the lid, give 3 whistles on high flame.

Lower the flame, cook it for 7 minutes. Turn off the flame, allow it to depressurise naturally.

* Step 10

Open the lid after 10 minutes. Take out in a serving bowl, garnish it with chopped dhania patta.

Cooking instructions

* Step 1

Wash kaddu, keep aside.

* Step 2

Take a pressure cooker, add kaddu.

* Step 3

Now add 1 cup water, place the lid, give 2 whistles at high flame.

* Step 4

Switch off the flame, allow it to depressurize.

* Step 5

Take out in a bowl, do not discard the water, keep aside.

Take a wok, add ghee or oil, heat it.

* Step 7

Add panchphoren & dry red chilli, saute it for a minute.

* Step 8

Now add boiled kaddu with the remaining water, give a stir.

Add salt & sugar, stir it for a minute.

Cook it at high flame till a lil dry.

Add imli paste & Kashmiri red chilli powder, stir it.

Switch off the flame, cover it with the lid for 5 minutes.

Karela is a healthy ingredient that can be used in various forms.

Ingredient

mustard oil

haldi powder

1/4 tsp

saunf powder

2 tbsp

dahi

Cooking instructions

* Step 1

Take a wok, add oil, heat it.

* Step 2

Add panchphoren, let it splutter.

* Step 3

Now add garlic & dry red chilli, sauté it till garlic turns brown.

* Step 4

Add haldi now, sauté it for a while, do not let it burn.

* Step 5

Add karela & onion, stir it nicely. Add salt & dhania powder, sauté it for a while.

* Step 6

Cover it with the lid now, lower the flame, cook it for a while.

* Step 7

Open the lid now, add saunf powder & again cover it, cook it till done.

* Step 8

Increase the flame now, open the lid, add dahi, stir it gently.

* Step 9

Moderate the flame, cover it with the lid, cook it till dry.

* Step 10

Remove the lid, increase the flame, fry karela for a while.

* Step 11

Stop the flame now, take out in a serving bowl.

* Step 12

Serve it with normal paratha or roti.
