Cooking instructions

* Step 1

Soak soya chunks in boiling water for 1/2 hr. Strain it, transfer it to normal water for 1/2 hr. Strain it, keep aside.

Take a pressure cooker, add soya chunks, bari elaichi, laung, dalchini, choti elaichi & kali mirch. In goes chana dal, dry red chilli & salt.

Top up with water, place the lid, give 6 whistles on high flame. Lower the flame, cook it for 5 minutes. Turn off the flame.

Allow it to depressurise naturally. Open the lid after 5 minutes. Take out in a bowl, leave aside the water if at all it is left. Allow it to cool down.

Grind it coarsely, take out in a bowl, keep aside.

Lightly dry roast the besan, add in the batter, mix it well.

Take small portions of the batter, roll it, give a shape of your choice.I have kept it round.

Take a wok, add oil, heat it. Moderate the flame.

Deep fry the cutlets, 2 at a time, until brown. Take out in a bowl or dish.

Cooking instructions

* Step 1

Take a pan, heat it. Turn off the flame. Add badam, kaju & pista.

Now add melon seeds, saunf, kali mirch & poppy seeds.

In goes elaichi powder, kesar & rose petals.

Dry roast them in the pan heat. Can turn on the gas for 30 sec. Cook it e a minute. Take out in a dish, let it cool down. Grind it. Take out in a bowl.

Add cinnamon & nutmeg powder, mix it well.

Take a mixing jar, add milk. In goes 4 tbsp thandai powder, blend it till smooth.

Transfer it to a serving glass, garnish it with a rose petal. Serve it chilled.

Strain rice, keep aside. Take a pan, add ghee or oil, heat it.

Moderate the flame, add whole garam masala, saute it for 30 sec. In goes zeera, let it splutter.

Add onion now, increased the flame, stir fry it until light brown.
