* Step 1

Wash the veggies, keep aside separately. Take an iron wok, add oil, heat it. Add garlic, saute it until brown.

In goes dry red chilli, saute it until brown. Add onion now, stir fry it until light brown.

In goes aloo, salt & haldi powder, stir fry it for a minute.

Add ginger paste now, give a stir b. Lower the flame, cover it with the lid, cook it until aloo is almost cooked.

Open the lid, increase the flame, add tomato & methi patta, also add dhania powder, stir fry it for a minute. Cook it covered on low flame for 5 minutes.

Open the lid, increase the flame, stir fry it until a lil dry. Do not over cook it.

Turn off the flame, take out in a serving bowl, garnish it with a green chilli. Can be served along with Roti or Paratha...

* Step 1

For Palak Puree.a). Blanch 1 bunch of palak, transfer it to the ice cold water.

* Step 2

B). Take a grinder jar, add palak leaves, 1/2 cup dhania patta & 6 green chilli, grind it to a fine paste, keep it. Use only 1 cup of this. Wash methi, keep aside.

Take a pan, add 2 tbsp oil, heat it. Add 1/2 cup onion, stir fry it until light brown. Add ginger garlic paste, saute it until rawness is released. Add very lil water to avoid burning.

Now add methi & salt, stir fry it until a lil dry.

In goes palak puree, mix it well. Cook it until a lil thick. Turn off the flame, keep aside.

Take another pan, add rest of the oil, heat it. Add whole Garam Masala, saute it for a sec.

Add onion now, stir fry it until light brown.

In goes ginger garlic paste, saute it until rawness is released. Add very lil water to avoid burning.

In goes tomato & salt, cook it covered on low flame until tomato becomes mushy.

Open the lid, increase the flame, add haldi powder, dhania powder & red chilli powder, add very lil water to avoid burning, stir fry it until oil has surfaced.

Now add curd & fresh cream, mix it well. Cook it covered on low flame until oil has oozed out.

Open the lid, add garam masala powder, stir it.

Now add cooked palak methi in the masala, mix it well.

Meanwhile boil matar dana for 5 minutes, strain it. Add in the masala, mix it well.

Cook it until oil has oozed out. Add 1/2 cup water, mix it well. Give a boil.

Cover it with the lid, lower the flame, cook it for 5 minutes.

* Step 1

Take a pressure cooker, add strained dal, salt, haldi powder & oil. Add 1.5 cup water, place the lid, give 4 whistles on high flame. Lower the flame, cook it for 5 minutes. Turn off the flame, allow it to depressurise naturally. Open the lid, take out in a bowl, keep aside.

Take a tadka pan, add ghee, heat it. Add hing & zeera, let it splutter. In goes dry red chilli, saute it for a sec.

Now add onion, stir fry it until light brown. In goes tomato & salt, mix it well.

Ingredient

1/2 cup

arhar dal,

Cooking instructions

* Step 1

Mix dals in a bowl, wash it, soak in water for 1/2 hour. Take a pressure cooker, add strained dal, haldi powder, salt, hing & ghee. Add 2.5 cup water.

Place the lid, give 5 whistles. Lower the flame, cook it for 5 minutes. Turn off the flame, allow it to depressurise naturally.

* Step 3

Open the lid after 5 minutes, give a stir. Dal should be a lil thick. Keep aside.

In the mean time, take a wok, add 1 tsp oil, heat it. Add garlic, saute it until light brown. In goes dry red chilli, saute it for a sec. Add washed methi patta & aloo, stir fry it for a minute. Add salt, give a stir. Cover it, cook it on low flame until almost cooked. open the lid, stir fry it on high flame till dry. Keep aside.

For 1st Tadka.... Take a wok, add ghee, heat it.

Add hing & zeera, let it splutter. Now add onion & green chilli, stir fry it until light brown.

Lower the flame, cover it again cook it until oil has oozed out.

Open the lid, increase the flame, add methi aloo, mix it well. In goes dal. Stir it.

U can add water as per ur desire. Cook it for 5 minutes. Stir in between.

Turn off the flame, take out in a serving bowl. Keep aside.

Fir 2 nd Tadka.... Take a tadka pan, add ghee, heat it.

In goes garlic, saute it until brown. Add dry red chilli, saute it until light brown.

Turn off the flame, add Kashmiri red chilli powder, immediately pour onto the dal.
