* Step 1

In a pan heat some oil Add clove cinnamon garlic ginger chillies onion tomato cashew nuts dry Red chillies Saute till tomatoes soften Cool and grind into a fine paste Add curds while grinding Add salt red chilli powder turmeric powder dhanya jeera amchur powder garam Masala sugar Let it simmer well for 5_8 minutes Switch off gas

* Step 2

In a bowl add red chilli powder turmeric powder, jeera powder amchur powder kasuri methi Marinate the Paneer Capsicum and chopped onion in it Let it stay for 15 minutess

* Step 3

Take some more in the same pan Add the marinated capsicum and onion to it Once they are semi cooked Add the gravy that you have kept aside Now add the marinated paneer carefully so that you do not break it

* Step 4

Cover the pan with lid and let it cook for 5 to 10 minutes. Add fresh cream on top Remove in a serving bowl Garnish with kasuri methi and finely chopped coriander

* Step 5

Serve hot with paratha or chapatis

Global Apron week 5,( the flour feast challenge)-{ whole wheat flour 🌾}, a delicious, tasty Punjabi seviyaan are mostly made on Sikh festival season as dessert but sometimes we all miss our child hood dessert, cook by our moms, this recipe belongs to my late Mom's recipe book. Course: indian dessert, Cuisine: indian ( north indian) , diet: vegetarian, nutrition value: vitamins A,B,D,E, fiber, calcium, copper, protein, iron, zinc.

Ingredient

4 cups

milk 🥛

2 tbsp

raisins

Cooking instructions

* Step 1

In a pan add 1 tbsp salted butter, margarine 🧈 let it melt, add dry fruits (almonds 🌰, cashew nuts, pumpkin seeds, sunflower seeds, black currant raisins and raisins) fry them on low medium heat till golden, remove from pan and keep aside.

* Step 2

In melted butter or margarine 🧈, add remaining butter, margarine 🧈, let it melt, add plain wheat flour vermicelli 🌾, cook till golden brown, add colourful wheat flour vermicelli 🌾, cook for 1 min, add 🥛 milk, mix well, let it boil.

* Step 3

When half done, add sugar and mix well, add half of the fried dry fruits 🌰, rose essence 🌹, cardamon powder and mix well, add condensed milk 🥛 and mix well, cook for 5-6 mins, remove from heat, let it cool down, transfer to serving dish, garnish with remaining fried dry fruits 🌰, keep in the fridge, for 4 hrs and serve cold.

Note: check the consistency of seviyaan, according to you taste, some like thick and some like thin, it's your choice, if seviyaan becomes thick, add little more milk and mix well, check sugar, fridge and serve.moslty Punjabi seviyaan is little thick, due to adding condensed milk 🥛.

* Step 1

Peel and cut banana into cubes🍌, also peel mango and cut into cubes 🥭, squeeze orange 🍊 to get fresh juice, keep aside.

* Step 2

In a blender, add banana cubes 🍌, mango cubes🥭 and orange juice 🍊, sugar and blender, add milk powder, vanilla extract and cold water 💦, blender once again

* Step 3

In a serving glasses, pour the shake and add chopped black currant, raisins and mix, then add sliced almonds 🌰, sliced cashew nuts mix, garnish with sliced almonds 🌰 and sliced cashew nuts. Serve

Today is Sikh new year, this famous, popular sweet is made with tiny' boondi' that are fried in ghee or oil and then mixed with sugar syrup, this indian sweet is a dessert for special occasions. Happy baisakhi, Course: indian dessert, Cuisine: indian, Diet: vegetarian, nutrients value: vitamin B6, C, E,K, protein, magnesium,fiber and phosphorus.

Ingredient

2 cups

gram flour

4-5 tbsp

sliced almonds

Cooking instructions

* Step 1

Fry the 'boondi': in a large bowl 🥣, add gram flour, orange food colour, add 1/2 cup water 💦, add slowly and mix well, first form a thick batter without lumps. Add 3-4 tbsp water 💦 and mix well, let the batter sit for 15 mins, after 15 mins the batter will be thick, add 3-4 tbsp water 💦 and mix well. It should be a flowing batter without any lumps.

* Step 2

Heat oil for deep frying in a wok or pan, the oil had to be moderately hot, take perforated ladle spoon 🥄, with your hand ✋ hold the ladle 3"-4" above the oil, start pouring the batter through the ladle, let the tiny boondis, cook for 30-40 sec or till golden, remove from oil and add in a large sieve. Repeat until all tiny boondi are fried and batter is complete. Keep aside fried boondi.

* Step 3

Note: Don't over fry the boondis or make them crisp,if boondi become crisp, the laddoos won't be soft and they won't be able to absorb the sugar syrup. Remember to completely wipe clean the ladle with a wet cloth, in-between frying each batch, or the boondi will be clump.

* Step 4

For sugar syrup: in a sauce pan, add sugar, water 💦, a pinch of orange food colour and let it boil, when boiling add cardamom powder mix well, the sugar syrup should be sticking form, add fried boondi and mix gently, cook on medium slow heat, add edible gum crushed, mix well, add black & golden raisins 🍇, sliced almonds, cashew nuts and mix well.

* Step 5

Check all the sugar syrup is dried out in the saucepan, remove the saucepan from the heat, wait for 2-3 mins, first touch with a finger, if it's cool enough to handle, don't burn your hands✋, Add some oil on your hands.

* Step 6

Start shaping the' ladoo' the mixture would be warm. On cooling they become firm, garnish with melted chocolate 🍫, black & golden raisins 🍇 and chocolate sprinkles. Happy baisakhi

In a small bowl 🥣 add basil seeds and soaked them in milk/ water 💦 and keep aside.

* Step 2

In a bowl 🥣 mix evaporated milk, chilled milk 🥛, sugar, saffron, cardamom powder and mix well, pour in serving glasses and add dry fruits ( sliced almonds, sliced cashew nuts, sliced pistachios mix well, on top add soaked basil seeds and serve it.
