* Step 1

Dry roast whole red chilli,whole coriander seeds,green cardamom,whole cloves,cumin seeds,black pepper,mace and cinnamon and lastly add anardana / pomgranate seeds. I

In a blender add all dry roasted garam masala to make a fine paste.

Soak chickpea over night and add 1 tbsp of baking powder.

* Step 4

Pressure cook with salt and 2 cup of water for 10 mins.

* Step 5

Drain the chickpea and store the water

* Step 6

Heat clarified butter / ghee in a pan fry the sliced onion till brown.

* Step 7

Add ginger garlic paste,chole masala,turmeric powder and saute for 2 - 3 mins.

* Step 8

Add tomato paste and saute for 2 - 3 mins.

* Step 9

Add anardana /pomegranate seeds,salt and mix well.

* Step 10

Now add poiled chickpea and saute for 3 - 4 mins

Add chickpea water.

* Step 12

Add roasted garam masala and cook simmer for 10 mins.

Garnish with coriander leaves.

Take a large bowl add all purpose flour,salt and 2 tbsp clarified butter and mix well

* Step 1

Wash and soak chana dal for 4 - 5 hours.

* Step 2

Add 1 - 2 tbsp water and grind coarsely.

Take a bowl add chana dal paste,onion,coconut,green chilli,garam masala powder,salt and coriander leaves and mix well.

Take one tsp oil in a pan.

* Step 5

Add black mustard seeds,cumin seeds and asafoetida to crackle.

Add curry leaves and switch off the gas and mix in the chana dal paste.

* Step 7

Shape each ball to vada.

Dip fry in hot oil and drain in paper napkin.

Serve hot with tea.

Marinate chicken with red chilli powder,turmeric powder,garam masala,salt and hang curd.

Keep in the freeze for 45 mins.

Heat oil in a wok.

Add rice flour in the marinated chicken and deep fry all the chicken pieces till brown.

* Step 5

4 - 6 batch wise fry all the chicken pieces.

Flip it.

Again heat oil in a same pan.

Add cumin /jeera seeds to crackle.

* Step 9

Add chopped garlic and stir fry for one mins.

* Step 10

Add 8 - 10 curry leaves,green chilli and garlic paste and some water.

Add red chilli powder,garam masala powder and curd.

* Step 12

Add sugar and salt and add some water.

* Step 13

Add chicken pieces into the gravy and mix well.

Garnish with curry leaves and green chilli.
