My Husband makes this a lot, it's one of my favourite meals! It's perfect for warming up your belly.

Ingredient

1 tbsp

olive oil

280 grams

long grain rice

Cooking instructions

* Step 1

Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside.

* Step 2

Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.

* Step 3

Stir the chicken back in with the rice, add the tomatoes and stock.

* Step 4

Cover and simmer for 20-25 mins until the rice is tender.

‘Soboro’ means crumbled meat. ‘Soboro’ dishes are cooked with minced Meat or crumbled Tofu. I have shared several ‘Soboro’ recipes on this website, and they are all quite popular. This is another ‘Soboro’ dish in curry flavour.

Ingredient

Oil

Carrot

Curry Powder

4 tablespoons

Soy sauce

Cooking instructions

* Step 1

Cut all vegetables into small pieces, the size similar to Peas.

* Step 2

Heat Oil in a frying pan and cook Minced Meat. When Meat changed colour, add all vegetables and cook for a few minutes. Add Curry Powder and cook until the vegetables are softened.

* Step 3

Add Sugar and Soy Sauce, and cook a few more minutes. Add Ground Chilli if you like extra spiciness.

* Step 4

Enjoy with freshly cooked rice.

Creamy Prawn ‘Korokke’

‘Korokke’ is a deep fried potato cake coated with Panko Breadcrumbs, originally related to a French dish ‘Croquette’. I have introduced the most popular and basic ‘Korokke’ that is made with Beef Mince, and also ‘Curry Korokke’. Here is another type that I make for my family. As these ‘Creamy Prawn Korokke’ are very soft, a unique technic is needed.

Ingredient

* Step 1

Clean the Raw Prawns and cut into 1cm pieces. If you use Cooked Prawns, simply cut them into 1cm pieces and set aside.

* Step 2

Heat Butter in a frying pan and cook Onion and Garlic until soft, then add Raw Prawns and cook for 1-2 minutes until the prawns are cooked through. Season with Salt and Pepper. *If you use Cooked Prawns, you need to cook only Onion and Garlic.

* Step 3

Meanwhile, peel Potatoes and cut into small pieces. Cook in salted water until soft. Drain very well and mash.

* Step 4

In a large bowl, combine mashed potatoes, prawn mixture (OR onion mixture and cut prawn pieces), Frozen Peas and Corn, saved finely chopped onion and Japanese Mayonnaise, season with Salt & Pepper, then let it cool.

* Step 5

Now you need a plate or baking tray. Divide the mixture and make round patties. Place them on the plate or baking tray, and place in the freezer for 1-2 hours so that the patties become firm for easier handling.

* Step 6

Coat with Flour, then dip in lightly whisked Egg(s) to coat, and finally coat with Panko Breadcrumbs.

* Step 7

Heat deep frying Oil to around 180℃ and fry the patties for 2-3 minutes or until golden brown. I recommend to serve with 'Tonkatsu’ Sauce OR Tartar Sauce.

My sister first cooked this dish many years ago. It became one of my family’s favourite dinner dishes. I altered her recipe and now I am cooking it for my own family in Australia. This dish is again so easy and delicious and your rice cooker does the job. My children always love it served with their favourite Tofu & Egg Soup.

Ingredient

1 tablespoon

Olive Oil

Cooking instructions

* Step 1

Prepare the Prawns. If you use Frozen Prawns, thaw them thoroughly.

* Step 2

Wash Rice and place it in the rice cooker. Add Stock up to the 3-cups-marking.

* Step 3

Add Onion, Prawns, Parsley, Olive Oil and Salt & Pepper. Then press ‘COOK’ button to start cooking.

* Step 4

Thaw Frozen Peas & Corn. When the rice is cooked sprinkle Peas & Corn over the rice and let them steamed for 10 minutes. Then loosen and mix gently.

5 . Prawn Doria

‘Doria’ is a rice dish. Early 20th century in Japan, a Swiss chef created this dish for the first time. Butter rice or pilaf is covered with white sauce and grated parmesan cheese, then baked in the oven. ‘Doria’ is very popular in Japan.

Ingredient

1 tablespoon

Oil

40 g

Butter

1/4 cup

Plain Flour

2 cups

Milk

Cooking instructions

* Step 1

Preheat oven to 200C.

* Step 2

To make White Sauce, heat butter in a saucepan over medium heat until melted and foaming, add flour and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.

* Step 3

Heat Oil in a frypan, cook finely chopped Onion until soft, add Cooked Prawns, Cooked Rice and grated Carrot, then add Frozen Peas & Corn and season with Salt and Pepper.

* Step 4

Slightly oil a large ovenproof dish, place the fried rice and pour the White Sauce over the rice. Sprinkle with grated Cheese, and bake for 20 minutes or until golden.
