When I stir-fry Harusame Noodles, I usually soak them in water before cooking. You don’t need to do that for this dish. This is a very simple, quick and easy recipe. Today I used 100g Lettuce, but you can add a lot more.

Ingredient

Eggs

1 teaspoon

Oil *plus extra

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

Cooking instructions

* Step 1

Whisk Egg(s) in a small bowl, and lightly season with Salt & White Pepper.

* Step 2

Combine all the Sauce ingredients in a small bowl. Prepare Prawns and Lettuce. You must prepare everything before you start cooking. Cooking process doesn’t take long at all.

* Step 3

Heat Oil in a frying pan, cook Egg(s) softly, return to the bowl. Add extra Oil if required, cook Prawns, then add Lettuce and lightly season with Salt and White Pepper. *Note: DO NOT overcook Lettuce.

* Step 4

Add the sauce. Tilt the pan and cook Harusame Noodles in the sauce, turning and stirring. When Harusame Noodles become soft and transparent, return the Egg, and mix to combine.

The other day, when I was not feeling well, I wanted to eat something soft and comforting. I had Silken Tofu, so I decided to cook this Rice Bowl. Probably it took me less than 5 minutes to cook it as I used leftover cooked Rice. If you are tired and feeling a little down, try this dish. It is very comforting and actually quite nutritious.

Ingredient

1 teaspoon

Soy Sauce

1 teaspoon

Mirin

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small frying pan OR saucepan. Alter the amount of Salt to suit your taste.

* Step 2

Bring to the boil and gradually add Potato Starch (OR Corn Starch) mixture stirring well. The sauce thickens instantly, add Silken Tofu and mix to combine.

* Step 3

Pour the whisked Egg over the Tofu pieces, gently mix, then remove from heat. DO NOT overcook the Egg.

* Step 4

Half fill a bowl with warm Cooked Rice and cover it with the Tofu and Egg mixture. Add some Spring Onion and Nori, and enjoy.

My ‘Mabo Dofu Japanese Style’ is quite different from the authentic Chinese ‘Mapo Tofu’, but it is what my mother used to cook. It is not very spicy and that was important for my family because we could hardly enjoy very spicy food. Today I cooked almost same Pork Mince mixture, but, instead of adding Tofu to it, I poured the mixture over cold Silken Tofu. A quicker & easier way to enjoy the same ingredients.

Ingredient

1 teaspoon

Sesame Oil

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Sake (Rice Wine)

1 teaspoon

Sugar

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Heat Sesame Oil in a small frying pan over medium high heat and cook Pork Mince. When colour has changed, add Spring Onion, and stir for a few minutes.

* Step 3

Stir the Sauce well and add to the pan. Stir until completely thickened.

* Step 4

Remove excess water from Tofu, place in serving bowl OR plate, cover with the Pork Mince mixture, and serve.

4 . Enoki ‘Mochi’ Pancakes

Enoki ‘Mochi’ Pancakes

These are savoury pancakes that have unique rubbery texture similar to Mochi. You can make these Mochi Pancakes using Plain Flour only, but the texture would be slightly different. If you use Plain Flour only, alter the amount of Stock. The batter should be quite thin. These Enoki ‘Mochi’ Pancakes are great for snack OR drinking. I would enjoy with chilled Beer.

Ingredient

1/4 cup

Plain Flour

1/4 teaspoon

Salt

Cooking instructions

* Step 1

Combine the Batter ingredients in a mixing bowl. This batter is quite thin. Add Enoki and Spring Onion, and mix well.

* Step 2

Heat a small amount of Oil in a frying pan over medium heat, form small thin pancakes, and cook until both sides are nicely browned. *Note: Today I made 8 pancakes.

* Step 3

Serve with Soy Sauce (OR Ponzu) & Chilli Oil.

I made this Rice Bowl dish based on my ‘Mabo Dofu Japanese Style’ recipe. As the saltiness and flavour of Miso vary with the products, please alter the amount of ingredients accordingly and make the sauce suit your taste. Eggplant should be meltingly soft and it takes time to cook it. If you are in hurry, cut it into smaller pieces.

Ingredient

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

1 teaspoon

Sugar

Cooking instructions

* Step 1

Place all the Sauce ingredients in a small bowl and mix well. Adjust the amount of Sugar and Soy Sauce depending on the flavour and saltiness of Miso that you use.

* Step 2

Peel OR partially peel Eggplant and cut into bite-size pieces. Smaller pieces can be cooked quickly.

* Step 3

Heat a small amount Oil in a frying pan over medium-high heat, and cook Pork until nicely browned. Transfer to a plate.

* Step 4

Lower the heat to medium, add 1-2 tablespoons Oil to the pan and cook Eggplant. When Eggplant is soft, return the Pork, add the Sauce and stir to combine. Gradually add Potato Starch mixture and stir well until thickened.

* Step 5

Half fill a bowl with warm Cooked Rice and cover it with the Eggplant mixture. Sprinkle some finely chopped Spring Onion on top and enjoy.
