Japanese pickled cucumbers in 5 mins🥒 🌶 -Asazuke(浅漬け)-

This has been one of my most favorite side dish during a hot summer. Since I knew this recipe in Cookpad Japan, I have repeated more than 10 times! It goes very well with meat or slightly heavy main dish. Looking forward to know how you like it! ❤️

Cooking instructions

* Step 1

Wash cucumbers, cut the end part and rub together to remove scum. Use a peeler and peel the skin for around 3 parts per cucumber(by doing this, the taste will absorb more).

* Step 2

Slice the cucumbers in 3-5 mm. Place them in a container and add Shiro dashi, water and Japanese vinegar.

* Step 3

Cut the dried chili and sprinkle on the cucumbers.

* Step 4

Keep them in a fridge for few hours. You can enjoy them around a week.
