3D macarons

Round-shaped macarons with durian filling. We can make other flavors that have round shape fruits for example orange, mangosteen...etc

Ingredient

Cooking instructions

* Step 1

Mixed icing sugar and almond powder. Sieve to fine powder.

* Step 2

Beat egg white until foamy. Add cream of tartar, follow by 3 portions of caster sugar. Beat egg white until firm peak meringue is formed.

* Step 3

Add almond powder mixture from step 1 to meringue in 2 portions. Fold the mixture gently until observe a ribbon-liked batter (before this stage food color is added to avoid over-mixed batter)

* Step 4

Piping green color batter onto a rounded silicone baking mold. Let it dry by forming thin skin then start piping white and yellow batter as well as green batter to make durian liked appearance.

* Step 5

Let the batter dry on the mold for 30 minutes (no sticky stain on your finger once you touch it)

* Step 6

Bake at 140C for 20 minutes. Leave the macaron shell cool completely before remove them out from mold.

* Step 7

Prepare durian filling by melting white chocolate in heavy cream. Add durian puree. Keep in the fridge for more than an hour before use.
