Basic Fried Potatoes

When I was young, I pored over ancient cookbooks. I couldn’t afford to take the family to dinner or fill a freezer with convenience foods because I was so broke. So I took what I learned from my mom and read every cookbook I could get my hands on, and started educating myself. If I couldn’t buy it, I would make it with inexpensive, bare bones ingredients. But first I had to learn HOW to make it. As we all know, we’re still in school 😂 my basics are, as an example, potatoes, eggs, cooked sauces, a chunk of meat, cakes, cookies, veg, etc. I’ve made a LOT of bad food in my life but I’ve also made really good stuff too. My first roast I ever made took 20 minutes, it was grey, and it bounced🤣🤣 With these basic recipes I’m posting, I’m hoping someone can get some good basic knowledge to feed themselves and their families good homemade food and not be a slave to the high prices. A sack of potatoes is cheaper than a bag of frozen fries and tastes waaaaay better and you get so much more bang for your buck with more than one serving and options.

Cooking instructions

* Step 1

I highly suggest using cast iron if you can. If not, go with nonstick and make sure your pan has plenty of room for stirring. I use enameled cast iron or regular cast iron.

* Step 2

In a large cast iron pan on medium/high heat, add oil and let it heat up first. I put one piece of potato in the oil. When it starts frying it’s ready. Add cut potatoes and spread them out. Season but don’t mess with them. Allow them to fry until they release from the bottom of the skillet. Use a good metal spatula. Scrape under them and flip instead of trying to stir them.

As they fry and you work them, they’ll stop sticking as they brown. Let them get as crispy and brown as you them to be.
