Uzbek Pilaf / Plov

Plov is a very popular Uzbek dish.It is also referred to as 'pilaf' or 'palov'. It is made up of long grain rice, tender chunks of lamb, onions,whole garlic and carrots.
It's rich and savory flavors are signature to the dish.

Cooking instructions
* Step 1
Heat oil in a deep pot.Once the oil is hot, add the mutton pieces and fry for 5 minutes.
* Step 2
Now add the sliced onions and keep frying with the mutton till the it turns light brown in colour.
* Step 3
Now add water to the pot to cook the mutton. Add salt and a whole garlic. Cover with a lid and cook on medium flame till the water is reduced to half and the mutton pieces are properly cooked.
* Step 4
Now add the carrot jullienne to cooked mutton.Add cumin seeds and pepper powder.Mix well.
* Step 5
Now layer the basmati rice on top of the cooked mutton.Add water for the rice to cook.Add 2 whole garlic again and little more salt if required.
* Step 6
Cover it with a lid and cook on low flame till the rice is properly cooked.
* Step 7
Once done remove from the stove and serve hot.Yummy Uzbek Pilaf is ready to be served.
