Inspired French Onion soup / soupe à l’ognions gratinée (without wine/alcohol)
Following @tomo ‘s onion soup recipe with some adaptations.
I’ve never made or had onion soup before. I thought it’s something you can only “enjoy” when made by a professional chef.
Last year I went to Toulouse-France in October and one chef told me ahh come back in November my dear, that’s when we start making it… unfortunately I didn’t go back but I happily made it today (finally!) and it’s SOOOO DELICIOUS!! Where have you been all my liiiife!

Cooking instructions
* Step 1
Melt the cheese and add the onion. Mix well to make sure each slice of onion is coated with butter
* Step 2
Lower the hear (lowest level), cover and cook for 1 hour. Stir occasionally.
* Step 3
While stirring, scrape the layer that sticks at the bottom of the pot. This hold all the delicious sweet flavour of the onion!
* Step 4
After an hour, add a teaspoon of flour to the onion, mix, always on medium heat
* Step 5
Add the stock cube in 700ml of boiled water, increase the heat and start pouring the stock gradually while constantly stirring
* Step 6
Add salt and black pepper to taste. Lower the heat again, cover and cook for another 20-30 minutes. You’ll see this scum on the surface, remove it.
* Step 7
Now the soup is ready! Add toasted bread and some grated cheese on top. Place under the grill in the oven until the cheese melt nicely
* Step 8
The soup is not too watery. You can adjust the consistency by adding more water if you want or cookin it for longer if you need to make it less watery. Bon appétit! 😊
