Lebanese style okra with tomato sauce
#ChooseToCook- I used to hate okra as a kid but I still had to eat it when mum makes it while it’s in season. It was NEVER an option for us to not eat what she cooks even if we don’t like it 😂
Season and fridge ingredients were always the first and only decider at home for mum when it comes to what to cook.

Cooking instructions
* Step 1
Crush the garlic (with some salt if using a pestle and mortar)
* Step 2
Add a generous amount of olive oil in a pot and fry the garlic with onions first until the onion is slightly soft, then app the peeled and sliced tomatoes, turn the heat down to medium/low, cover and cook for around 5 minutes
* Step 3
Add the okra with a squeeze of lemon. Mix gently.
* Step 4
In a bowl, add tomato paste with water and 1/2 teaspoon coriander powder. (✅ If using fresh coriander, add straight to the pot 5 minutes before turning the heat off so the leaves don’t lose their taste)
* Step 5
Add the tomato sauce to the pot, cover and cook for 30 minutes until the ingredients are well combined and the sauce is thickened.
* Step 6
Enjoy with pita or flat bread!
