Meringue boulders Strawberry coulis and halved soaked strawberries

Ingredient

* Step 1

Make meringue by weighing egg whites and then doubling the sugar! Put in a mixer and let mix for about 10 minutes!

* Step 2

Chop strawberries and put with a drop of water and sugar Cook down and reduce! Put through a strainer so sauce is smooth!

* Step 3

Take halved strawberries and soak in any alcohol! Or even the coulis! Take the meringue and dehydrate over night! And let it go like powder! Break into small rocks and decorate the plate!

* Step 4

Add small drops of Chantilly cream!
