Quick sambar with chayote
Chayote or even called as chow chow is a member of gourd family. Having antioxidants and vitamin c chayote has immense health benefits. Do include this vegetable in your family diet chart.
Try this recipe and you will surely make up your mind to buy this vegetable again and again.

Cooking instructions
* Step 1
Soak toor dal and masur dal in clean water for 30 minutes. Then wash it properly.
Now take a pressure cooker, put the dal, add water covering the dal. Boil it for some time without putting the lid. Remove the scum. Then add the diced chayote, chopped onion, chopped tomatoes, fresh green chillies, salt, turmeric powder, sambar powder, jaggery powder, hing and ghee. Give a nice gentle mix.
* Step 2
Now covering the cooker lid pressure cook for 3-4 whistles. Let it come to room temperature.
* Step 4
Meanwhile extract tamarind pulp. As cooker comes to room temperature, remove the lid. Mix well and adjust the consistency by adding water. It must be medium runny.
* Step 5
Add the tamarind pulp. Mix again.
* Step 6
Now prepare for tempering.
Heat oil. Splutter rye and cumin seeds. Add dry red chillies and curry leaves. Saute. Add this tadka into the prepared sambar. Let it come to a single boil. Give a nice gentle mix.
Garnish with chopped coriander leaves.
* Step 7
Spicy chayote sambar is ready..
Have it with hot steaming rice, idli or dosa
