Eggplant and Black Chana Masala

Cooking instructions
* Step 1
Assemble the ingredients. For my convenience I steamed the chopped eggplants.
* Step 2
Heat oil, add dry chilli, and allow to crackle ponch phutan. Add onion and curry leaves. Saute for a while. Further add both the daals. Continue frying till onion translucent.
* Step 3
Then add salt, turmeric powder and sambar masala powder, chopped tomatoes and ginger. Mix well and add sambar masala powder. Cook covered till eggplant is done.
* Step 4
Now mix well the boiled black chickpea well with the veggies. Cook for a minute. Garnish with chopped coriander leaves and serve with steamed rice and Dal.
