Dosa with Aloo Masala

Cooking instructions
* Step 1
Grind soaked urad dal, methi seeds in a grinder with a little water to a fine paste.
* Step 2
Mix rice powder and poha powder. Adjust the batter with water. Keep overnight to ferment.
* Step 3
The next day, add salt, sugar and manage the batter, adding more water as required.
* Step 4
Heat 2 tbsp cooking oil
Add panch phutan and allow to splutter.
* Step 5
Add both urad and chana dal, curry leaves, and hing powder. Saute for 30 seconds.
* Step 6
Add onion, chili, and ginger. Saute till the onions are translucent.
* Step 7
Add green peas and saute till they soften. Mix tomatoes, salt, turmeric, and curry masala. Cook till tomatoes are mushy.
* Step 8
Add 1 cup water and bring to boil. Mix the mashed boiled aloo with masala and cool toll the water is absorbed. Garnish with coriander leaves. The potato masala for Dosa is ready.
* Step 9
Heat a skillet. Grease with oil. Adjust the heat by sprinkling water.
* Step 10
Take a ladle full of batter and make a nice dosa. Grease the sides of the dosa with oil.
* Step 11
Place the aloo stuffing and spread on the dosa. Garnish with chopped onions. Fold and serve hot. Delicious masala Dosa is ready to Serve.
