Kankada and Potato fry
This vegetable is commonly known as Spiny Gourd. In Oriya we call it as Kankada. This is the season ,it is available in the market. It has two variety. The smaller ones are deshi . Both varieties are tasty. It's used as a vegetable in India and some part of South Asia. It has high fiber content and anti oxidants. It reduces stomach infection in monsoon and controls constipation. I like this vegetable to savour as shallow fried with potato.

Cooking instructions
* Step 1
Clean, wash and chop both veggies in round way. Mix all the ingredients with the chopped veggies properly. (Except mustard seeds, chilli, corn flour and, cooking oil)
* Step 2
Marinate the veggies for 30 minutes. Then in a microwave safe bowl half cook them for 4 minutes. Let it cool.
* Step 3
To the marinade masala water add cornflour and half boil veggies. Mix well. carefully.
* Step 4
In a pan heat oil. Splutter mustard and split red chilli. Shallow fry the veggies on both sides in medium flame.
* Step 5
Serve delicious and yummy Kannada and Potato fry with sauce.
