Got a fish bone from local fishmonger, and prepare the fish stock.

Ingredient

water

Cooking instructions

* Step 1

Clean up the fish bone. First, put salt on the fish bone surface and leave it for 10-15 min

Pour boiled water over the fish bone to clean up.

Put the cleaned bones in a deep pot and pour water, salt and added green part of leeks. Many kind of vegetables are often used to take stock.

* Step 4

Use middle heat to simmer, and take out scums coming out on the surface.

Do not put a lid, and keep middle heat for approx. 30 min.
