Baked jollof rice

After reading through Brenda Njemanze's recipe, I felt like I should challenge myself and join the cross country competition. Thanks Brenda Njemanze for the recipe, though I baked the rice. #festivedishcontest #crosscountrychallenge

Ingredient

Food ration :

10 servings

Cooking time :

60 minutes
4 cup

rice

1 dash

oregano

1 dash

thyme

Cooking instructions

* Step 1

Soak the rice in warm water for 30 minutes

* Step 2

Peel and blend tomatoes, 2 onion, chili, ginger and garlic. Sweat them in a pan until water dries out

* Step 3

Dice the other onions and saute for a minute, add in tomato paste and stir

* Step 4

Add in the blended mixture and let simmer for 5 minutes

* Step 5

Add in thyme, oregano, salt and the cube. Add the chopped bell pepper

Add in the rice and the water and stir

* Step 7

Cover with foil and place in a preheated oven under 150 degrees Celsius. Keep checking until water dries out

Remove from oven and let sit for at least 5 minutes before serving

Serve and garnish
