Cooking instructions

* Step 1

preheat oven to 180 combine zucchini, mushrooms, oil and garlic and set aside

* Step 2

to make herb damper

* Step 3

sift flour and salt into a large bowl. using fingertips rub butter un to mixture until resemble fine breadcrumbs

* Step 4

make well in center of flour, stir in buttermilk and 1/2 cup cold water to form a soft sticky dough, stir in basil and chives

* Step 5

turn dough onto a lightly floured surface and knead lightly for 1 to 2 mind or until just smooth

* Step 6

shape dough into an oval and cut shallow slits at 5cm intervals across top. brush with a little cold water and dust with flour

* Step 7

bake vegs and damper for 30mins or until damper sounds hollow when tapped. drizzle vegs with vinegar

* Step 8

slice'damper and arrange all ind on a platter
