French Onion Soup

French Onion Soup
Is from a Recipe Book on soups . Goes well with some grilled French bread
Cooking instructions
* Step 1
Heat the olive oil and fry the onions in a saucepan on a gentle heat until they are golden in colour, about 5 minutes
* Step 2
Add the flour and cook for a further few seconds
* Step 3
Add the vegetable stock, mustard and garlic
* Step 4
Bring to the boil and then reduce the heat, simmering for about 15 minutes
* Step 5
Allow to cool to room temperature (as per manufacturer's recommendation)
* Step 6
Pour the contents carefully in to the Nutri Ninja and blend for about 30 seconds, or until smooth. Add more stock or hot water if required
* Step 7
Gently reheat before serving. Add salt and pepper to season if required
