Leek and Potato Soup
Cooking instructions
* Step 1
Heat the oil in the pan and fry the onion and garlic for 3 min.
* Step 2
Add the leeks and cook for 3 min more stirring regularly.
* Step 3
Add the potatoes and cook for 2mins.
* Step 4
Add the stock then bring to the boil, then simmer gently for 15 min until all the vegetables are soft.
* Step 5
Remove pan from the hob and stir in the milk
* Step 6
Leave to cool for 15-20 min then blend until smooth and season.
