Butternut squash soup (tekvicová polievka)

Recipe can be vegetarian if you use vegetable broth and even vegan if you use plant based butter.
Cooking instructions
* Step 1
Prepare ingredients. (Pripravíme si ingrediencie.)
* Step 2
Peel and chop butternut squash and potatoes to small cubes. Add olive oil, salt, pepper and dried thyme and bake it at 200°C for 25 minutes. (Ošúpeme a nakrájame tekvicu a zemiaky na malé kocky. Pridáme olivový olej, soľ, korenie, sušený tymián a pečieme 25 minút pri 200°C.)
* Step 3
Meanwhile prepare chicken or vegetable broth and chop vegetables. (Medzitým si nachystáme kurací alebo zeleninový vývar a nakrájame si zeleninu.)
* Step 4
In a bigger pot, melt butter with olive oil and cook chopped onion until golden brown. Add other vegetables and cook them until soft. Season with salt and pepper. (Vo väčšom hrnci si roztopíme maslo s olivovým olejom a osmažíme nakrájanú cibuľu dozlatista. Pridáme zvyšnú zeleninu a varíme do zmäknutia. Osolíme a okoreníme.)
* Step 5
Add roasted squash and potatoes and pour over broth. Simmer 10 minutes. (Pridáme opečenú tekvicu a zemiaky a zalejeme vývarom. Varíme ešte 10 minút.)
* Step 6
Blend the soup carefully with hand blender until creamy. Serve with pumpkin seeds. Bon appétit 😋 (Polievku opatrne rozmixujeme tyčovým mixérom. Podávame s tekvicovými semienkami. Dobrú chuť 😋)
