O'brien Potatoes from the settlement cookbook -1965
Cooking instructions
* Step 1
Pare potatoes and shape into balls with vegetable cutter or cut into cubes.
* Step 2
Soak in cold water and drain well.
* Step 3
Fry in deep, hot fat (375f), until brown and tender.
* Step 4
Drain and sprinkle with salt.
* Step 5
Fry onion I 2 tbs butter until golden brown; add pimentos as green pepper.
* Step 6
Heat thoroughly; add the fried potatoes.
* Step 7
Serve hot, sprinkled with chopped parsley.
