Banana Muffins

Made with only 1/4 cup Oil, these Banana Muffins have much lighter texture than my ‘Banana Cupcakes’. Today I added sliced Bananas on top. These Banana pieces look good and also taste great.

Cooking instructions

* Step 1

Preheat oven to 180℃. Line a 12-hole medium-size muffin tin with paper cases.

* Step 2

Combine Self-Raising Flour, Sugar and Salt in a mixing bowl. Add Egg, mashed Banana, Buttermilk and Oil, and mix well. *Note: If the Banana is small, you might need to add extra 1-2 tablespoons Buttermilk.

* Step 3

Spoon the mixture into the cases and place 2-3 slices Banana on top.

* Step 4

Bake for 20 to 25 minutes OR until nicely golden and cooked through. Transfer to a wire rack and cool.
