California Farm Quinoa Stuffed Beefsteak Tomato
Using quinoa and garbanzo beans instead of ground beef, we copied the most popular New York City vegan hamburger here at home. These hamburger meat substitute ingredients taste even juicier when browned and then baked inside large ripe beefsteak tomatoes, recipe below.

Overnight prep, 30 minutes cook
Cooking instructions
* Step 1
Pick and ripen beefsteak tomatoes in windowsill in full sun till they smell sweet, one or two days.
* Step 2
Boil quinoa in sauce pan with salted water till fluffy, 30 minutes. Drain.
* Step 3
Soak garbanzo beans overnight, boil in sauce pan in salted water till soft. Drain. Puree in food processor.
* Step 4
Glaze onions with fennel, almonds, peppersauce in cast iron skillet with dab of butter. Put in food processor.
* Step 5
Roast carrot slices 30 minutes in cast iron skillet with butter in oven till soft. Put in food processor.
* Step 6
In food processor, Pulse garbanzo beans, spices, almonds, onions, carrots to ground meat consistency. Put in large bowl. Add red quinoa, mix with fork. Add potato starch slurry. Add soy sauce. Add lime juice. Mix in one Tbs panko breadcrumbs at a time and stir to stiffen the mix till the consistency of hamburger meat. Roll meat into large ball, rest to let moisture and potato starch slurry distribute evenly
* Step 7
Slice thick top off the tomatoes, hollow tomatoes with ice cream scooper or spoon, save inside for butter lettuce leaf salad.
* Step 8
Form four quinoa balls to fit inside tomatoes, brown balls in cast iron pan in butter. Fry four minutes each side till brown with a crust.
* Step 9
Stuff tomatoes with browned quinoa balls. Top with Tsp tomato paste and slice of dairy or cashew cheese, cover cheese with tomato top, bake 45 minutes at 350F degrees.
* Step 10
Serve on leaf of butter lettuce with butterleaf tomato/shallot salad and sweet and sour miniature pickle on the side. Flavor with mint jelly. Enjoy
