Luchi (Indian puffed bread)

Luchi is a traditional Bengali deep fried puris made with all purpose flour. The difference between Luchi and Puri is that puris are North Indian style and made with wheat flour.Traditional Luchi is mostly served with begun bhaja(brinjal fry),cholar dal, dum aloo,sookhi aloo subzi or kosha mangsho(dry mutton curry).
Cooking instructions
* Step 1
Sift maida in a bowl.Add pinch of salt,refined oil and ghee.Mix all nicely and add 3/4th cup water approximately. Make it into a tight dough.Knead well for few minutes to make a smooth dough.Cover and let it rest for 20 minutes.
* Step 2
Make lemon sized balls out of the dough.Smear little oil on each balls and roll out thin luchis 4 to 5 inch in diameter. Heat oil smoking hot in a wok.Reduce flame and fry luchis one by one.Toss and fry the other side.Serve puffed up luchis with your favourite subzis or mutton curry.
